iPad & iPhone Basics


You are never too old to learn something new! Join the online world using your iPad & iPhone. Technology can bring many potential advantages to seniors such as enhancing communication, bonding with family and friends, and reducing loneliness. We will cover the basic functions, applications, and other fun features. This class covers basics and is designed for beginners.

Chef Nikki Schaeffer Bio

Since 1990, Chef Nikki Schaeffer has explored the culinary spectrum from working at Wolfgang Puck's ObaChine in Seattle, to the four-star luxurious Silks at Stonehedge Inn in Massachusetts. She holds a degree in Baking and Pastry Science from Johnson & Wales University and has worked alongside internationally renowned Executive Chefs. It was under those mentors that she learned the important elements of fine dining, the science of taste, and cooking techniques that have earned her accolades for over two decades.

In 2001, Nikki was hired by an upscale restaurant group for a temporary, yet unique, position. She was to relocate to Southern California for several months to plan and execute wine-paired dinners along the West Coast in order to promote the company and increase brand recognition. When the job ended, and it was time to return to the East Coast, she decided she would rather stay in Southern California!


She quickly found a job in the area and spent the next 13 years as a corporate Pastry Chef while running her own catering company. In 2014, she semi-retired from the production side of the restaurant business and became a private consultant for restauranteurs. In 2015, Nikki found her true (second) calling: teaching. Hired for her boisterous personality, as well as her willingness and desire to pass on everything she has learned as a Savory and Pastry Chef, Sur La Table hired her to be an Instructor. In a short time, she was promoted to Resident Chef, directing the Culinary program at SLT’s La Jolla location until its recent closure.


Nikki resides in Encinitas with her turtle, Puck (no relation to Wolfgang).

Music Appreciation with Chris Burn

The Music of Johann Sebastian Bach

During this hour you will be enchanted by Johann Sebastian Bach’s creativity. Instructor, Chris Burns, will share his music performed on traditional instruments, guitar, and even jazzy vibraphones. Enjoy gorgeous classical melodies that will enchant you!

Introduction to Memoir Writing 

During this Pandemic, when we find ourselves with extra time at home, we have the perfect opportunity to finally write a memoir. This Introduction to Memoir Writing
will give you the tools you need to begin to tell your life story.  In this four-week class, you will learn how to write about your experiences, the people in your life, the memorabilia that surrounds you, and the places that have influenced you.


Author and writer, Kay Sanger, has led workshops, written for dozens of publications, and authored seven books, including, Write Your Memoir in 10 Steps. Kay currently teaches writing and facilitates memoir writing groups in Southern California. 

DURATION: 4-part course will be held on Tuesday, February 2, 9, 16, and 23rd

Sketching Workshop


Learn about renowned artist Minnie Valero’s artistic process in sketching. Sketching allows you to remember more details than just taking a picture - when traveling or around town. Be bold, dare to sketch the life around you!


Born and raised in Córdoba, Argentina, Minnie Valero immigrated to the US with her family, and pursued a career in public high school education while obtaining Masters degrees in English and Linguistics, Counseling and Educational Policy from UCLA.  Now, she divides her time between her home in California, and her travels around the world (when allowed), painting and teaching art in French, Spanish, and English.  


Artist Statement: I enjoy working with watercolor, pastel, acrylic, and oils, artfully blending classical and contemporary. I let the painting choose the medium. Portraits, landscapes, figures: my divergent interests in genre stem from a deep love of the interplay of light, shadow, mood, and drama, always trying to convey harmony in the composition. I am a contemporary impressionist. The challenge of doing something unusual, and sometimes working with found mediums keeps my work fresh, relevant, and ever evolving. I am now working with original pigments from Nepal. We will see where this leads. I paint with pleasure and passion.

The benefits of art and creating for seniors are endless. Some benefits include:

DESCRIPTION: These Spanish classes are being offered in two different beginner levels from one of the best-rated Spanish schools in the World, Blink Spanish.  This 6 week program includes a total of 24 hours of small group classes.  In focused & small groups you will receive a strong foundation and basic level of Spanish.  Blink Spanish is based out of Medellín, Colombia and is well known as one of the best immersion Spanish schools in the world. These group classes will be available only to our members and friends of the LJCC. All of the professors are native-Colombians and the Colombian Spanish accent is widely considered the cleanest and most neutral accent in the Latin world. All classes are recorded and can be made available for review should you miss a class.
