Staying Active While Staying Put


While the pandemic has continued to limit the places we can go, safe and effective exercise can be had right at home. Keeping active, especially during these uncertain times, is as important as ever to maintain our physical and mental health. This class will cover whole body flexibility and balance exercises using little to no equipment to promote strong, flexible and limber muscles to improve posture, balance, and overall quality of life.

Class taught by Ulster Napoles, a clinical kinesiologist with Reneu Health Inc that provides one on one activity-based exercise for those in need. As a former lecturer at California State University, Los Angeles, Ulster has continued on to deliver educational presentations regarding the importance and delivery of exercise to maintain physical ability which help us enjoy more of the things we love to do.

Spanish Multi-Level Group Classes

 

LEVEL 1

START DATE: Mondays & Wednesdays. Starts Monday, September 21 ends Wednesday, October 28, 9-11am

DURATION: 6 week course - 2 hour classes, twice-a-week.

COST: $139/Member. $159/Non-Member. Includes all classes, administration and curriculum. 

10 students max per class. Registration required.

LEVEL 2

START DATE: Tuesdays & Thursdays. Starts Tuesday, September 22 ends Thursday, October 29, 9-11am

DURATION: 6 week course - 2 hour classes, twice-a-week.

COST: $139/Member. $159/Non-Member. Includes all classes, administration and curriculum. 

10 students max per class. Registration required.

 

DESCRIPTION: These Spanish classes are being offered in two different beginner levels from one of the best-rated Spanish schools in the World, Blink Spanish.  This 6 week program includes a total of 24 hours of small group classes.  In focused & small groups you will receive a strong foundation and basic level of Spanish.  Blink Spanish is based out of Medellín, Colombia and is well known as one of the best immersion Spanish schools in the world. These group classes will be available only to our members and friends of the LJCC. All of the professors are native-Colombians and the Colombian Spanish accent is widely considered the cleanest and most neutral accent in the Latin world. All classes are recorded and can be made available for review should you miss a class.

Expert 1-on-1 Spanish Instruction:

There is no better or efficient way to learn Spanish than with focused 1-on-1 classes.  The professors at Blink Spanish in Medellín Colombia are known as some of the finest in the world and they have taught thousands of people how to speak Spanish.  We are offering their most comprehensive service which they call Focused Private Spanish.  This means that there is a high level of customer service & communication and they will choose your professor based on your preferences, learning style and personal language background. With private study you choose the days, times, and frequency of your classes.  The following prices are for packages of hours and include placement test (if necessary), and all administrative/curriculum costs:

5 hours: $79/Member, $89/Non-Member

Cooking with Chef Nikki

Roasted Game Hen Dinner

In this class you’ll learn the technique of Spatchcocking poultry to create a juicy, evenly cooked Cornish Game Hen in half the roasting time. While it’s in the oven, we’ll put together a quick side dish of Blistered Brussels Sprouts with a Balsamic Vinegar Glaze.

Savory Tarts
The class will begin with learning how to make a perfectly flaky pie dough. Using the best produce at its peak time, we’ll assemble an Heirloom Tomato Galette with Parmesan Cream and a Savory Peach Tart with Goat Cheese and Thyme using puff pastry.

Chef Nikki Schaeffer Bio

Since 1990, Chef Nikki Schaeffer has explored the culinary spectrum from working at Wolfgang Puck's ObaChine in Seattle, to the four-star luxurious Silks at Stonehedge Inn in Massachusetts. She holds a degree in Baking and Pastry Science from Johnson & Wales University and has worked alongside internationally renowned Executive Chefs. It was under those mentors that she learned the important elements of fine dining, the science of taste, and cooking techniques that have earned her accolades for over two decades.

In 2001, Nikki was hired by an upscale restaurant group for a temporary, yet unique, position. She was to relocate to Southern California for several months to plan and execute wine-paired dinners along the West Coast in order to promote the company and increase brand recognition. When the job ended, and it was time to return to the East Coast, she decided she would rather stay in Southern California!

 

She quickly found a job in the area and spent the next 13 years as a corporate Pastry Chef while running her own catering company. In 2014, she semi-retired from the production side of the restaurant business and became a private consultant for restauranteurs. In 2015, Nikki found her true (second) calling: teaching. Hired for her boisterous personality, as well as her willingness and desire to pass on everything she has learned as a Savory and Pastry Chef, Sur La Table hired her to be an Instructor. In a short time, she was promoted to Resident Chef, directing the Culinary program at SLT’s La Jolla location until its recent closure.

 

Nikki resides in Encinitas with her turtle, Puck (no relation to Wolfgang).

Mindfulness Based Stress Reduction (MBSR) 8-Week Course

 

MBSR is designed to relieve stress and increase well-being in both personal and professional settings. 

 

As you consider registering for this course, please be aware of the following:

  • It is important to attend all sessions of the course.

  • A personal commitment to MBSR meditation practice of 45-60 minutes daily at least six days per week for eight weeks is essential. The time can be divided into two meditations if desired. Your commitment is essential. It is the practice of mindfulness meditation that will enable you to fully realize its benefits.

  • A personal commitment to practice mindfulness in daily living will enhance the benefits of the MBSR practices. We can bring mindfulness to eating, walking, driving, interpersonal relationships, anytime throughout the day.

  • In addition to meditation practice, you will have home assignments to complete in preparation for each class session.

 

This highly participatory, practical course includes:

  • Guided instruction in mindfulness meditation practices

  • Gentle stretching and mindful yoga

  • Inquiry exercises to enhance awareness in everyday life

  • Individually tailored instruction

  • Group dialogue

  • Daily home assignments

  • Guided audio files for home practice and worksheets

About your Instructors

Helen Kim is a Korean psychiatrist who came to UC San Diego, Center for Mindfulness (CFM) to learn about mindfulness interventions in depth. As a psychiatrist and a working mom she saw a lot of stress in her patients as well as within herself. She has found mindfulness to be a wonderful tool that promotes wellbeing from awareness and wisdom we all have within. She is currently teaching MBSR at UCSD, Center for Mindfulness. She likes to cook, walk and read.

 

Sofia Puerta Webber is a Colombian writer and journalist, yoga instructor and mindfulness teacher. She has been teaching yoga and meditation for 15 years to people from all ages and conditions. Sofia is the creator of Shiwido™ the toy with exercise in mind. She likes to paraglide, swim, hike, run, roller blade and gardening.

Want to learn Zoom basics or have unanswered questions? Join this casual weekly group to learn about Zoom in a group setting. This weekly class is for beginners with basic questions about Zoom and its functions and is designed to get you set up to join us and friends through Zoom meetings.

Music Appreciation with Chris Burns

September: Native American Music Traditions

Native American Music: Melodies for Love, Songs for the Community, Music in Harmony with Nature. In this hour we will enjoy the dramatic and lovely diversity of North American Native American music. Gorgeous wooden flutes, drums for the hunt, songs for success…this hour is rich in America’s original sounds and contemporary expressions of ancient notes.

October: The Classical Piano: Charming and Dramatic

This class is musically delicious!  It features the classical piano: sometimes bold and dramatic, other times enchanting and romantic. This hour will make your day special...thanks to Debussy, Chopin, Liszt, Beethoven and Rachmaninoff. Gorgeous music samples that include gentle and lovely concertos, songs without words, dreams, preludes and much more!

November: Music Inspired by Fairy Tales

This hour will delight your imagination with the music of The Snow Maiden, Scheherazade, Swan Lake, Peter Pan, and much more. Stories from Russia, Persia, England, and secret lands of magic have inspired some of the most wonderful and dramatic music ever composed. Let your imagination soar with the creativity of Tchaikovsky, Rimsky-Korsakov and John Williams.
