Roasted Game Hen Dinner

In this class you’ll learn the technique of Spatchcocking poultry to create a juicy, evenly cooked Cornish Game Hen in half the roasting time. While it’s in the oven, we’ll put together a quick side dish of Blistered Brussels Sprouts with a Balsamic Vinegar Glaze.

Savory Tarts
The class will begin with learning how to make a perfectly flaky pie dough. Using the best produce at its peak time, we’ll assemble an Heirloom Tomato Galette with Parmesan Cream and a Savory Peach Tart with Goat Cheese and Thyme using puff pastry.
